Stocking up for the Super Bowl at a… Mexican market.  But the place is so cool! Got a flavor of yummy cheeses, tropical fruits, “real” Mexican tacos and the feel of Central American Markets.

Next time we’ll take more photos – only got shots of dinner with the great cheese, steak, and cactus salad – a first for both of us.

Redlands Mexican Market

Cactus Salad:

  • 1 pound cactus paddles
  • 2 cloves garlic
  • 1/2 Medium Onion
  • 2 medium tomatoes, diced small
  • 1 medium tomatillo, diced small
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon white vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 2 tablespoons of parsley
  • Freshly ground black pepper to taste

Directions: 

Remove all cactus needles and cut into strips or squares.  In a large pot boil water with onion, garlic & vinegar. Once the pot is boiling add the cactus and boil for 10 minutes. Plunge them into an ice bath to complete the blanching process. Finish by rinsing them thoroughly.

Add remaining ingredients and serve.
